Title: What does everyone charge for half pigs and what is in there?

I've half pigs many times before I just sold it for £90 a half £170 for full but that was without sausages. My butcher charges me £1 for 1lb of sausages extra my previous half had the following

22 chops est
1 belly roast joint or belly pieces
1 leg joint boned and rolled (cut up into smaller joints if wanted)
1 shoulder boned and rolled (cut up into smaller joints if wanted)
Head trotters if wanted?

When I have the pig I keep for myself butchered I have 1 shoulder turned to sausages but were on earth would I get the sausages for customers from without them loosing a joint?

I'm interested to hear what people have got to say on this subject. I'll be selling three pigs by the half in a few weeks time. They're all sold  but I just took a guess and asked for £4.00 a kilo.
I have a friend whose getting £6.00 a kilo but the joints are boned and rolled.

I believe quality sausages are made from shoulder + belly.

I sell my half pigs not butcherd at £115 per half thats 5.75 per kg

An interesting question. What is a half pig? Half a 60kg pig is a lot different to half a 90kg pig. We don't sell half pigs as such but if we did they'd have to be priced by the kg. I bet most people who occasionally sell half pigs don't even know exactly what they're selling.

This is what we sold at Xmas
 
1/4 pigs @ £80 approx weight 11kg inc sausages
 
1/2 pigs @ £150 approx weight 22-23kg inc sausages
 
This is boxed, vac-packed & labelled by my butcher and is what he calls traditionally jointed.

We sold half pigs  last year at £135 a half + £1/lb for sausages.  We allow people to customise their cutlists- most start with taking out default cutlist first time round and then when they've seen what they use and what they can get, change it to suit themselves better on subsequent times.

Our default list is:

loins: 1/2 as chops; 1/2 boned and rolled
shoulder: boned and rolled - whole
chumps: boned and rolled - whole
hams: boned and rolled - whole
bellies: whole
liver, heads, ears, trotter
offcuts: sausages

I sell them as 10kg boxes which don't contain chops or loin steaks at £6.50kg, with chops and steaks £10kg.
Don't undervalue your product, you deserve more if you have done your job well.
