Title: Make your own Baileys

Thought I'd post this, just getting into the spirit of the season!
 
I received this recipe for homemade Baileys from a friend, and since we had some cheap cooking whisky in the cupboard, we thought we might as well give it a go!
 
Dissolve 33g good dark chocolate in Bain Marie with 1/6th cup of sugar.
Add 1Tsp vanilla extract and 1/8th cup of very,very strong coffee.
Remove from heat and gently whisk in 1/2Pint of thick cream
Add 3/4 cup of whisky.

Bottle and keep in Fridge up to two months.
 
First impressions?  It's not half bad!!  It's never going to be mistaken for the real thing, but it's good enough to get the general idea, and I can tell you now that there's no danger of it lasting more than the claimed two month shelf life!!
 
The key variable seems to be the amount of coffee added, so adjust that to taste.

I had a recipe as well but very different. It did make a good substitute for Bailey's though. I must have a look for it but, from memory, it was beaten eggs, whisky, condensed milk and cream with strong coffee as an optional extra (which I never bothered with).

I find kahlua and milk tastes quite similar to the coffee baileys, and works better for my cows milk allergy as I can use goats milk.
That said, I have gone for a full bottle of coffee baileys, to be taken with piriton over the festive period!
