So chooks being dispatched tomorrow and am eager to package them really well for the freezer. What is the best method?

Pluck, gut and sit in the fridge for 24 hours minimum.
That is the method I just used for a bunch of ducks. Then we put them in giant ziplock bags and sucked as much of the air out as possible and just put them in the freezer.

Definitely let rest for 24h after plucking and gutting, then joint (or not, in your case :) ).
We usually run out of bags and end up wrapping them in cling film :D Make sure every bit of meat is covered with plastic so as not to get 'freezer burn' (small slightly rough patches), which doesn't look nice.

Yes, get lots of huge freezer bags. We often double bag in case they get ripped.
