Don't know if I have done it right Rusty but 9/10ths won't understand this one Worse than Tibetan Cow is Chitterlings? Not so bad but orribull is Tripe with or without onions ??? :farmer:

I dont like chitterlins but my mum does :( I like tripe though and I use a Spanish recipe with black olives, fresh toms and loads of garlic for it. :)

 However, I know you like trotters George and I can abide them. Each to his/her own eh? lol

you'll be glad you asked Dixie. It's disgusting scraggy bits of chicken innards I believe, deep fried... popular in the deep south of America. Never tried them so hard to judge but really don't fancy it much nor trotters and definately not tripe.. (retching action going on)

you're just sick DM obviously  ;D.

I have a friend who travels a lot, firmly believes that when in Rome and all that, so in France he ate horse. bad boy.. in Vietnam he ate dog.. very bad boy .. and in Peru he ate Guinea Pig.. so disgusting.. but to people who live there nothing wrong with it I guess.

Chitterlings are pig's intestines, not chicken's. Tripe is lovely, but really depends on how it's cooked. You've got to cook it well, or you'd be eating something like tough stinky towels. By the way, people going yuk and gross, if you've eaten commercial sausages, you wouldn't even want to know what goes in there! I, personally think offal is underrated  ;D

So what do you do with the offal off the pigs? Don't you eat them?

Me no! but everyone raves about the liver! my boys like hearts, Dad likes the kidneys and the rest gets boiled for the dogs! Dad makes pork pies and does something with the trotters for this!

there's a move towards encouraging people to eat more offal, I understand it was a necessity during rationing nothing got wasted and it's only now folk are so picky. I used to like to eat liver as a kid but then there was scare mongering about commercially farmed animals livers not being good for you so I've never gone back to it. I suspect the family would really turn their noses up if I presented them with liver and onions or even worse heart or kidneys...

So anyone got any good offal recipes then? maybe I should give it a go and see if I can disguise it and get them to eat some..

Do you like pate? It's a good place to start with pig's liver, and you can make any variation of it. Pate on toast....mmmmmm.... :yum:

We live on a camp so the food is ok

but

Local food is snakes, lizards and some form of bushmeat (they are little rat like things that live in the jungle)

Im a manager for an Oil service company and I work month on month off in Equitorial Guinea (and its not as well paid as you may think and its not very exciting either)  ;D

Id much rather breed rats,mice,snakes and goats lol

seems I eat more "offal" than I thought cause I love faggots and mushy peas too, so does the family. Mind that's the packaged ones but I bet the homemade ones are much nicer.

I know in reality I do eat chitterlings , as I eat sausages , but I have been served up a plate  full of chitterlings and they just looked like huge tape worms to me ...I was heaving .....liver I can just about eat , kidneys the same , but heart and lung as is .... no way ...BUT ... I do like faggots a lot (but not 'into' the American kind at all thankyou  !!) . Pigs trotters make me heave too , as does boiling bacon and peas pudding . I have got a tin of peas pudding , but for the life of me I just cannot bring myself to open it and give it a go ...those distant memories have scarred me for life ..lol  , but I will open it one day ...just not yet .... not yet ...

Dixie the trotters when boiled have a jelly that goes into pork pies :)

We often eat lambs hearts YUM! and liver although hubby wont touch any liver.

At 15 hubby was a Saturday butcher boy and has seen live crawl accross the butchers block with bacteria. lol Enough to put you off eh?

Jackie if you look in recipes you will see I have posted several for using pig offal You cannot make a good souse without a brace of good trotters and a slice of shin of beef.

Dixie round here chitterlings /chiterlins are made from the stomach of the pig and its a labour of love to prepare them Its Known as cleanin the s**t out before cooking them I am sure in the Southern States they are called Hog Maws.Its to much bother to prepare for me but the are extremely edible and many would say an acquired taste ;D :farmer:

Sagehen I like all pate and make a lot but not FISH I find chicken livers are a good place to start Pig livers are a bit strong and Ox liver very strong The variations are countless and I eat mine on toast.

Chitterlings are one of my Dad's favourite dishes in the middle of France. Last time I tried them I could not chew them up - my teeth kept bouncing off them. Way too rubbery for me. Maybe it was the cooking but it put me off.
Nastiest thing that I ever ate was a ten year old huge pickled fish egg in Japan. My host had saved it for a really special occasion. I felt very guilty that I just could not rise to the occasion -

Marigold dear I keep telling you I HATE FISH I am told Caviar is the thing but the smell puts me right off. Jackie I will post some pate recipes if you tell me what you like. Game -  Liver - Pig - Beef. Muther used to do one vith only veg. Now that is real crap before you digest it ;D  :farmer:

I was once given tripe, beautifully cooked at a friends house "as a treat". I had to cut it in tiny pieces and swallow it whole to get it down!

Don't you think that if they are good friends you could tell them?  "I'm really sorry, I know how much you've put into making this lovely food but I'm afraid I just can't eat tripe.  I have tried before and I just cannot get it down.  I hope you don't mind if I leave it"  I'm afraid i wouldn't make myself ill for anyone.  Most of my friends ask before I go if there's anything I really hate.

Jackie hello  There seems to me I think started by Delia to use up none rated food There was a pratt posted a slatting on Delia for using some food out of a tin.To which I replied with a Ken Dodd saying "If only" I am sorry if we fancy a corned beef hash I cannot make one with out opening a can.Oh yes C****** I know how to and do make corned beef if Wiz lets me have a nice piece of flank but its a month project and I fancy corned beef fritters NOW so I'll open a tin.Not bothering to go to recipes.If you like corned beef chill a can over night in the fridge and then peel a good size potato and slice it into 6m/m slices and dry the slices on kitchen paper.Open the can and slice the corned beef into 6m/m slices.Make your favourite batter fairly thick.get a potato slice a corned beef slice on top and a potato slice on top to make a sandwich secure with cocktail sticks stuck right through at 45 degrees to keep them together dip and coat all over with batter and deep fry.Not a weight watchers recipe this but then again none of mine are.Bugger it I'll get Kath to do some for lunch I'll pop a tin in the deep freeze for an hour So you know whats for  lunch if you are going past :D :farmer:

Hey sage try this if you haven't already Prep the tattie as previous post but don't chill the C/beef put it in a basin and chop it to bits then mash with a fork Now add as much HP sauce as you taste as good then put the mixture on the slice and put another slice on top and stick cocktail sticks in You may find a slightly thicker batter is good.To open your tin thats snapped the key use one of the can openers with 2 handles you nip together and wind the butterfly handle use sideways it won't reach down the side to the lids :farmer:

Of course Sandy I dont know how old you are but can you remember the real bully with big lumps of red meat and fat and gristle Then Fray Bentos realised if they minced it they could add more unsaleable meat and no one would know but I am sure todays is not as good in taste as the original sort but it mixes with a fork easier :farmer:
