Coddled Eggs

Do you know I'd never even heard of them! :dunce:

My 80 something year old neighbour was telling me about them this morning when I popped to see him with a token gift of eggs.

He showed me the little pots that they are cooked in. :love:

Anyone here cook them or know of a good place to buy the pots? I had a quick look on the net. They seem quite expensive for what they are.

A coddled egg is a slow cooked egg.

If you don't want to buy coddling pots you can cook them in the Shell by placing them in a pan of cold water, bring to simmer then take off the heat,cover and leave for the required time.

Yes, I suppose they are glorified poached eggs.

My neighbour adds cheese, herbs, etc to the pots though and they just seemed like an interesting alternative. Variety is the spice of life, as they say.
Especially when you have a lot of eggs to use up ;D.

Children it's coddled eggs, as opposed to the usual .... Fried, poached, scrambled, ......  ;)
