I've got a reasonable crop of trail of tears black beans and canellino rosso beans, how do I tell when they are dry enough to jar for storage please!

When the pods are dry cut the plants above the roots and hang upside down in a dry airy place until the pods begin to split. Then take the beans out and dry further, if you think they need it, on a frame covered in old net curtains or similar.

As above but also listen to them. Once the beans rattle like dry beans you would buy, then they're dry.
