Elderflower 'champagne' and christmas cakes

Have just tried the elderflower champagne I started about 8 weeks ago and it is good - very very good!  I have a friend who runs his own catering business who thinks it would be a great welcome drink at weddings.  Anther project to think about!

Currently have lemon and lime wine fermenting (got a load of free unused lemon and lime slices from an event that didn't get the custom they were expecting!) and think I will make a Christmas cake using the raisins once it is put into demijohns - does anyone have an reccomended recipes?   Or can I just use them as in a normal recipe?  Wonder if I have to adjust the other fluids?
