hard cheese (cheddar etc) - as a complete amateur

What size mould do I use - I thought size 7 - 1kilo to start? Also anyone recommend a guide that's been tried and tested and its simple?  Want to have a go with this now.  Thanks

There is a ratio of how much milk makes a weight of cheese, i cant remember it though. Gallon of milk makes a pound of cheese, could it be that?

Yeah I sent for the 1kg size as I need to get it right before making bigger cheeses.  Needed 1 gallon.
