Do you have a smallholders group?  Maybe this one? http://www.smallholder.org.uk/

Our one in Devon does frequent courses for everything and anything. I went on the poultry dispatch and dressing  course with Pammy and Ritchie Riggs and it was excellent.

   are you part of the North Yorkshire Smallholders Soc ? Lots of breeders in their directory who might be able to offer something. I wont be doing any until I have some turkeys to do in a few months but others will be doing Christmas turkeys in Mid Nov for the pub and restaurant market. That may be a good way to learn if you can help a smallholder to prep turkeys. They wont be wringing necks on birds that size though.... :thinking: [size=78%] [/size]
