Carrots

Have just dug all my carrots due to lack of space and they were getting pretty big, how long will they keep, do i need to do anything special with them or is there a GOOD WAY OF PRESERVING THEM OR NICE RECIPES TO GET THE BEST OF THEM?

We store our carrots in sand in tea chests. Thin layer of sand in the bottom, then a layer of carrots arranged so they are not touching, cover with sand, repeat.

Keep in a cool dark place. We've found they last until well into the spring, although towards the end they are only really good for soups and stews.
