Like porterlauren, it's a little family butcher with small slaughter house attached. I will definitely be going elsewhere next time.

£60 kill and cut (small family place, does kill both the kill and the cut!) with both shoulders to sausages and the rest of one half into chops, belly strips etc. other half just into joints. Was about 85kg live weight.

I know it's a bit after the event but I know this is the sort of thread I wanted to read and the info I needed when we first started out  :)

Yes Heyhay, it is a useful dialogue. My local abbatoir sits somewhere in the higher end on price.  But then you have to look at the whole picture, their costs will vary a lot across the country. for example premises are very expensive here. And to run small scale in this area will make cost per kill much higher.  And they are very good with the animals, very honest and a 3 mile drive away so worth every penny to me.

If you have the time it may be worth you investing in a good quality mincer/sausage stuffer and making your own sausages. You can buy the skins online and can flavour the sausages as you like. There are quite a few books on the subject.
