Trout Recipe Ideas

Hi

I've been given a whole trout, does anyone have any nice recipe ideas that are quick and simple to do? 

It's been gutted and the head is removed but it still has tail and backbone, i'm not sure if it's best to leave it as it is or take the bone out and open it up so it's flat.

Any advice gratefully received.

You could Barbie it, or bake it in the oven or a large frying pan, or under the grill.  I leave mine whole, but make parallel cuts (at an angle) along the thicker parts of the body.  Any herbs you want can be pushed into the holes, plus a bit of butter in each one and a sprinkle of lemon juice.  In the oven I would cover it, and cook til just tender.  Overcooked fish goes very dry.  Once cooked, the meat comes away from the backbone, and from the smaller bones if you're careful.  I love trout  :yum:
