The time of the coming of "liks" is here and here is our favourite way of using them, apart from likky and spud soup and using them in stews and casseroles.
                      Angelsey Eggs

    Boil one or two eggs per person (not too hard) then put into cold water until needed.
    Peel and cut up as many spuds as you may need, likewise leeks( I never weigh things but maybe half the weight of leeks to potatoes) boil until tender, in separate  pans if you like, then drain, mix and mash together really well, with butter and/or milk if you so wish.
Peel and half eggs and put in the bottom of a dish and spoon leek and potato mixture on top.
Keep warm whilst you make a really cheesy, cheese sauce and pour over top. put in a hottish oven until top is brown and bubbling. Serve at once, taking care to not burn your tongue!!!
