We sold our Shetland beef at £12.50 / kg last year. We sold it in roughly 10kg packs comprising joints, steaks, stew, braising steak, mince, burgers and Lorne sausage. Made up the packs, weighed them and multiplied it up.

I charge £15kg for mixed with rump steaks and £20kg for mixed with sirloin, fillet sold separatly at £50kg. My forerib/sirloin/fillet is hung on the bone for upto 50days so it looses a lot of moisture hence the outragous sounding prices but I always have a waiting list so shows the demand is there.
