What rorsa is saying is absolutely true. I had a nightmare with eggs during the warm weather. My cockerals were very busy shall we say, and my eggs were starting to develop in the cupboard. In five years I have never put my fresh eggs into the fridge since living in France, but for a while this cummer that is exactly what I had to do. I had to break every egg into a cup for inspeciton before using it. One day and put nine out for the pigs. It was awful and really sad as well.
When in doubt check them before use, but otherwise yes it is ok to eat them.
Just diverting a bit - did anyone see that programme on the tv about bizzarr cuisine in other countries. It wasn't very long ago if I remember correctly - in China - they actually candle their eggs to ensure they are fertilised. They then incubate on a very large scale, and select them at various stages of development for boiling and then eating. They are sold on the streets and in resterants - horrible. Some of the chicks were near their 21 days of development but not quite ready to hatch. They are considered a real delicacy, and they are more expensive the older they are. Thank god we are civilised!
