Green tomato chutney (simple!)

Ingredients:

•500g green tomatoes
•500g  red onion
•250g sultanas
•250g brown sugar
•2 tbsp salt
•1 tsp cayenne pepper
•1 tsp ground green cardamom
•500ml Malt vinegar


Method:
Chop everything up, (small or chunky, up to you)
chuck into a big heavy based pan .

Bring it to the boil and then turn down the heat , simmer for about an hour until reduced to a thick pulp.

Spoon into sterilised jars
(sterilise by standing clean, washed jars in the oven til hot)

enjoy!

Sounds great.  I thought I'd just have green toms this year but with this sunny weather recently they are starting to go red.  Will probably end up using this recipe though as I'm sure this weather won't last!

Made loads of the stuff this year but a slightly different recipe. Marrow chutneys a good one as well.

4lb green tomatoes, washed and chopped,
1 1/2lb shallots or onions, peeled and chopped,
1lb cooking apples ,peeled cored and chopped,
1 pint vinegar,
level tsp of crushed dried chillies(as a guide add more or less to what you like)
Ioz dried root ginger( I use powder equivelent),
8oz seedless raisins,
2tsp salt
1lb sugar.

Put the onions , tomatoes and apples in a heavy based pan and add half the vinegar. Bring to the boil and simmer for 30 mins until tender.
Add ginger, chillies and raisins and cook for an hour, stirring occassionally until the mixture thickens.
Add the salt and sugar and the rest of the vinegar. Stir until the sugar dissolves. Cook until the mixture is thick then pot and seal.

I got the recipe from a book called Farmhouse Cookery from the Readers Digest. My Mil gave it to me many years ago and has been my bible for self sufficiency recipies.

Sounds lovely but I meant the marrow chutney recipe! Might try your green tom chutney with a few more chillies for an extra fiery one though!

Hermit - I've got that book too (Marrow Chutney recipe not in there? Will look again...). Have you made the Orange Chutney? I'm off to make it now, have to make some every year - THE best chutney ever - lovely with cold meat...

OhLa La can we have the orange chutney recipe please?  It sounds really good.

Last year I made lots of red tomato chutney (with loads of chillies) as I had masses and masses of ripe cherry tomatoes - this year they refuse to ripen so it's the green version for me too this time.
