Muffins

Ingredients

  • 150g soft brown sugar
  • 2 eggs
  • 250ml milk
  • 125ml sunflower oil
  • 225g SR flour
  • 100g plain flour
  • 1 tsp bicarbonate of soda

Despite being incredibly calorific we manage to convince ourselves that these muffins are so packed full of great things they must be good for our health. Take the basic muffin recipe and add flavourings of your own. We've given a few of our favourite muffin recipes, but experimentation is half the fun.

For best results you absolutely must use a proper muffin tin and cases - yorkshire pudding tins just aren't deep enough!

Prep: 5 mins Cook: 30 mins Serves: 12

Instructions

  1. Whisk the sugar, eggs, oil and milk.

  2. Sift in the flour and bicarbonate of soda and beat until smooth.

  3. Add your flavourings (see below).

  4. Divide between 12 muffin cases in a muffin tin and bake for 30-35 minutes until well risen and browned.

Flavourings

These are just suggestions based on some of our favourites, so be adventurous and try your own concoctions!

  • Blueberry muffins - add 150g fresh or frozen blueberries
  • Apple and cinnamon muffins - 2tsp cinnamon and 150g apple, peeled, cored and chopped
  • Banana and walnut muffins - 2 mashed bananas and 100g chopped walnuts

Best served with a glass of ice cold whole milk.
