A friend loaned me a book of muffin recipes. While I was on holiday at half-term, I sorted out a basic recipe then started adding things. During the week I made blueberry; banana and walnut; apple and cinnamon and, finally, blackberry and vanilla (the last one was supposed to be raspberry and vanilla but what I thought were raspberries when I took then out the freezer, weren't). Dan (always conscious of his waistline) was taking them to work to hand out and I was sending his Mum home with some most days - she put on a pound and half that week. Dan started to count up the calories - but I argued that they're GOOD calories.

Tonight, I was bored so I made chocolate ginger muffins. We've tried them and they seem really nice but they were too hot to really tell. Ho hum, have to try again later. They're just so (too) easy -and the possibilties are almost endless. I'm toying with pineapple and coconut, chocolate orange, passionfruit...

Raspberry Wholemeal Muffins are very nice. I'll post the recipe when I find the time.

Chocolate and Banana Muffins are great as well, the recipe is on my blog somewhere.

Further ideas and recipes are welcome from me as well.

Hi Rosemary,

The last 2 lots of muffins I've made have been Nigella muffins -very yummy! Peanut butter and snickers were the first ones and then Gregg suggested nutella and mars bar - even yummier! Will post the recipes on the blog eventually!

These ALL sound very good to me. What kind of flour are you using? Also, what kind of blackberries do you have in Scotland?

How are the new chickens doing?

It is a nice 48 degrees here in Oregon today. Makes me get cabin fever again!

How interesting that two people from Oregon made it to the same website from across the Atlantic! It's going to get to 57* today and I just realized that I haven't planted a THING!

I love your diary and have been reading on and off for a year plus.

I was named Heather due to my Scottish ancestry (Baird clan :o)).

Keep writing and putting pictures up! You are an inspiration. Oh yah, the muffins...MMM..sounds like a pregnancy craving in the making. Thanks for posting.
