Oat Cookies

These are so easy, your biscuit tin will never be empty again. This is the basic recipe - you can add dried fruit, nuts, ginger, as you please. My favourite, so far, is ginger, with ground ginger and stem ginger added.

You'll need a lightly buttered baking sheet.

  1. Preheat your oven to 180C / 350F / GM 4
  2. Melt the butter, sugar and syrup in a pan
  3. Add flour and oats and mix well.
  4. Add dried fruit, nuts, ginger to taste.
  5. Form into balls about the size of a table tennis ball, place on the baking sheet and flatten slightly.
  6. Bake for 12-15 minutes until lightly browned.
